Vegans Take 520
Coinciding with the launch of our new menu, 520 got the chance to shine a spotlight on some enticing vegan options this su
mmer. We pride ourselves on having a little something for everyone who walks though our doors. When
Kristin called us about her idea with the Bellevue Vegan Crawl, we saw it as a great opportunity to highlight our focus this summer on making food that is equally healthy, welcoming, and delicious.
Vegan lifestyle coach and blogger Kristin lead multiple groups of new vegans and health enthusiasts through a crawl of multiple restaurants in Bellevue. Along for the crawl, Kristin explains to the Bellevue Reporter:
“I just noticed, on the Eastside, there’s not a lot of vegan-advertised restaurants, but there is actually a lot available,” she said. “My goal was just to expose Bellevue as a vegan-friendly city.”
We at 520 were excited to be able to participate with items already available on our menu this summer. While you may not be vegan, we have a feeling you might find this dishes equally delicious as they are nutritious.
Featured Vegan Eats
Sesame Kale Salad
Baby Kale, cucumbers, red & green bell peppers, bok choy, carrots, cabbage, red onions, craisins, red apples & pumpkin seeds tossed in sesame ginger dressing.
House made fresh garlic, olive oil & chickpeas mashed and served with cucumbers, tomatoes, and an assortment of vegetables.
